Caramel Apple Pie

Ingredients

For the Crust:

- 2 ½ cups all-purpose flour

- 1 teaspoon salt

- 1 tablespoon sugar

- 1 cup unsalted butter, chilled and cut into small pieces

- 6-8 tablespoons ice water

For the Filling:

- 6 cups thinly sliced, peeled apples

- 1 tablespoon lemon juice

- ¾ cup granulated sugar

- ¼ cup all-purpose flour

- 1 teaspoon ground cinnamon

- ¼ teaspoon ground nutmeg

- ¼ teaspoon salt

- 1 teaspoon vanilla extract

For the Caramel Sauce:

- 1 cup granulated sugar

- 6 tablespoons unsalted butter, cut into pieces

- ½ cup heavy cream

- 1 teaspoon sea salt

For the Topping:

- 1 large egg, beaten

- 1 tablespoon coarse sugar (optional)

Instructions

Make the Crust:

  1. In a large bowl, whisk together the flour, salt, and sugar.
  2. Add the chilled butter pieces and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough begins to come together. Form the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Make the Filling

  1. In a large bowl, toss the sliced apples with lemon juice.
  2. In a separate bowl, mix the sugar, flour, cinnamon, nutmeg, and salt. Sprinkle over the apples and toss to coat. Add the vanilla extract and mix well.

Make the Caramel Sauce

  1. In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color.
  2. Add the butter and stir until melted. Carefully add the heavy cream (the mixture will bubble up) and stir until smooth.
  3. Remove from heat and stir in the sea salt. Let cool slightly.

Assemble the Pie

  1. Preheat the oven to 400°F (200°C).
  2. On a lightly floured surface, roll out one of the dough disks to fit a 9-inch pie dish. Transfer the dough to the dish and trim the edges, leaving a 1-inch overhang.
  3. Fill the crust with the apple mixture, pouring any juices over the top. Drizzle half of the caramel sauce over the apples.
  4. Roll out the second dough disk and place it over the filling. Trim the edges and crimp to seal. Cut slits in the top crust to allow steam to escape.
  5. Brush the top crust with the beaten egg and sprinkle with coarse sugar if desired.

Bake the Pie

  1. Bake for 20 minutes at 400°F (200°C). Reduce the oven temperature to 350°F (175°C) and continue baking for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  2. Remove from the oven and let cool on a wire rack for at least 2 hours before serving.

Serve

  1. Before serving, warm the remaining caramel sauce and drizzle it over each slice of pie. Enjoy your caramel apple pie with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat!
